<p>Gotova je moja mala mjera marmelade od smokava s limunom. Ako nemate svoje smokve, onda je ta marmelada nešto skuplja, no nije opet kao da je gotovu kupujete. A domaće je ipak domaće, pa si svakako napravite malo marmelade, da vas zimi podsjeća na ljetne mirise.&nbsp;</p>



<h2>Sastojci</h2>



<p>1 kg smokava&nbsp;</p>



<p>Do 200 g šećera&nbsp;</p>



<p>1 limun (nije obavezan)&nbsp;</p>



<h2>Priprema</h2>



<p>Kod kuhanja, sok limuna, odnosno njegova kiselina, promijeni boju smokvama, doda im taj crvenkastiji ton. Ja sam koristila otprilike 1 kg smokava. Najprije ih operem, grubo ih očistim od dijela gdje je peteljka pa skinem s njom samo taj mali dio kore ili ako je negdje deblja skinem i taj višak kore (u Slavoniji je to zanimljivo, polovica koja je na suncu je uvijek mekana i slatka, a drugi dio još je zelen i tvrd). Dodam malo šećera, pa kuham da ukuhaju. Kad imam dalmatinske, zrele smokve, ne dodajem šećer jer zbilja ne treba. Kad su dijelom kuhane i već postanu mekane, štapnim mikserom ih usitnim u marmeladu bez komadića. Dodam sok pola limuna,&nbsp;ili ponekad cijelog, po želji kao i šećer. Koricu također. Kuham dok ne postane dovoljno gust.&nbsp;</p>



<p>Kada je marmelada gotova, punim je u sterilizirane staklenke, okrenem na poklopac&nbsp;5 min, pa vratim i to se pokazalo kao najjednostavnija metoda kod marmelada i slično.</p>

<p>Tradicionalni kuhani pekmez od šljiva. Nekada se pravio u kazanicama, na vatri i svi su bili uključeni u izradu ovog omiljenog pekmeza. Naravno, nitko ga nije volio miješati, jer kud se stoji uz vatru, a obično je još vruće, kud šprica i najopasniji je od svega što se priprema za zimnicu. Mislim čak i od ajvara! On se nekako brže ukuha.&nbsp;&nbsp;</p>



<p>Sada ga radimo u kući, a može se čak i u pećnici kuhati, poklopljena posuda i svako malo izvaditi i promiješati. Ja osobno radim na plinu, u loncu, pa kako bude. Najklasičniji recept. Neki dodaju cimet, neki čak i čokoladu, ali evo baze, a vi po vašoj želji dodajte ostalo. </p>



<h2>Sastojci</h2>



<p>5 kg šljiva&nbsp;</p>



<p>500 g šećera (samo da ubrzam proces. Nekad se pravio bez dodavanja šećera, ali i šljive su bile samo domaće, mekane i slatke. Kako se to mijenja, možete dodati do 30% šećera, no probajte sa što manje jer je odličan i tako. Šljive imaju puno pektina, tako da im nije potrebna &#8216;pomoć&#8217;.) </p>



<h2>Priprema</h2>



<p>Operite i prepolovite šljive, izvadite koštice. Stavite u veći lonac koji neće zagorjeti. To je važno! Dodajte šećer pa kuhajte. E sad presudno pitanje koliko dugo. Dok ne ukuha da je gust. To ovisi o šljivama i to vam točno nitko ne može reći. Par sati sigurno na laganoj vatri uz često miješanje. Stavite neku mrežu na lonac, pa je samo malo pomjerite i promiješate, da vas ne opeče i ne šprica svuda. Ipak, nemojte koristiti poklopac jer para mora izlaziti iz lonca.&nbsp;&nbsp;</p>



<p>Kada je gotov, skinite s vatre i punite u čiste, suhe i vruće staklenke (ugrijte ih u pećnici na 100°C oko 5 min). Zatvorite i okrenite na 5-10 min na poklopac, pa vratite u normalan položaj. Pustite da se ohlade i spremite na hladno i mračno mjesto. </p>

<p>8 debelih šnita domaćeg bijelog kruha&nbsp;</p>



<p>25 g maslaca&nbsp;</p>



<p>1 kilogram pečenog mesa i kobasica (goveđa šnicla, pečena ili s roštilja, tanko rezana šunka, pečene češnjovke prerezane po duljini, kulen ili kulenova seka)&nbsp;</p>



<p>12 šnita dobrog cheddara&nbsp;</p>



<p>4 jaja&nbsp;</p>



<p>krumpir narezan za pomfrit&nbsp;</p>



<p><strong>Francesinha umak&nbsp;</strong></p>



<p>25 g maslaca&nbsp;</p>



<p>300 g komadića nemasne govedine&nbsp;</p>



<p>1 mrkva, sitno narezana&nbsp;</p>



<p>1 luk, sitno narezan&nbsp;</p>



<p>1/2 žličice soli&nbsp;</p>



<p>2 žlice koncentrirane rajčice&nbsp;</p>



<p>1 lovorov list&nbsp;</p>



<p>60 ml porta ili whiskyja&nbsp;</p>



<p>375 ml lagera ili drugog svijetlog piva&nbsp;</p>



<p>1/2 šalice mlijeka&nbsp;</p>



<p>1 žlica škroba&nbsp;</p>



<p>1 žlica piri piri umaka, ili Tabasca ili 1/2 žličica čilija u prahu&nbsp;</p>



<h2>Priprema</h2>



<p>Ispecite meso i kobasice, ostavite ih na toplom.&nbsp;</p>



<p>Napravite Francesinha umak. U dubljoj tavi s debelim dnom na jakoj vatri zagrijte maslac, dodajte komadiće govedine ili pileće kosti i pržite dok dobro ne potamne.&nbsp;</p>



<p>Dodajte mrkvu, luk i sol pa nastavite pržiti uz često miješanje. Trebat će vam oko pet minuta. Umiješajte koncentrat rajčice i kuhajte još jednu&nbsp;minutu, pa dodajte lovor, port ili whisky, pivo i mlijeko. Ako koristite čili u prahu, dodajte ga u ovoj fazi. Kad zakuha malo smanjite vatru i pustite da kuha 30 minuta. U umak umiješajte škrob i piri piri ili tabasco. Procijedite umak, provjerite je li dovoljno začinjen i držite na jako toplom do serviranja.&nbsp;</p>



<p>Napravite sendvič. Tostirajte kruh i tanko ga namažite maslacem. Ispecite jaja na oko. Na kruh stavite meso, kobasice, šunku ili kulen (od suhoga odaberite što volite i neka je jako tanko narezano). Stavite jaje. Poklopite drugom šnitom kruha. Na sendvič stavite cheddar, složite šnite sira tako da kad se&nbsp;otope prekrivaju bočne strane sendviča.&nbsp; Zapecite sendviče kratko u pećnici, dovoljno je na 100°C oko 3 min, pazite da sir ne zagori.&nbsp;</p>



<p>Gotove sendviče stavite u dublju posudu, prelijte vrućim umakom (umak možete poslužiti i sa strane).&nbsp; Poslužite s puno pomfrita i hladnim pivom.&nbsp;</p>

<p>Pulled pork je jako popularan već godinama, a ja sam najfiniji jela u Italiji i Portugalu. Pokušala sam to ponoviti, jako su ukusni, a vi provjerite da li se vama sviđaju!&nbsp;</p>



<p>Kada pečete meso za pulled pork, onda obavezno pecite više. Jer pećnica i tako radi, a tražit će se i više sendviča i više mesa. Drugi dan se isto može jesti, u sendvičima ili samo uz dodatak salate, pommesa, nečeg drugog što volite. Tortilje na primjer. Varijanti je bezbroj. Također možete zamrznuti, samo neka ne stoji dugo, bit će ukusnije.&nbsp;</p>



<h2>Sastojci</h2>



<p>2 kg svinjske plećke bez kosti (neki vole samo suho meso, no trebate znati da je najbolje meso meso plećke. Ima dovoljno mišića, tetiva i masnoće da čini idealnu kombinaciju za kvalitetan umak i preukusno meso)&nbsp;</p>



<p>2-3 glavice crvenog luka&nbsp;</p>



<p>1 režanj češnjaka&nbsp;</p>



<p>Žličica mljevene dimljene paprike&nbsp;</p>



<p>Žličica majčine dušice&nbsp;</p>



<p>Žličica origana&nbsp;</p>



<p>Žlica soli&nbsp;</p>



<p>Malo korijandera, mljevenog kima, papra, chillija&nbsp;</p>



<p>1 žličica škrobnog brašna&nbsp;</p>



<p>Ciabatte&nbsp;</p>



<p>Po želji se dodaju, a ne moraju:&nbsp;</p>



<p>Crveni luk&nbsp;</p>



<p>Rajčica&nbsp;</p>



<p>Drugo povrće/ salata&nbsp;</p>



<p>Sir&nbsp;</p>



<h2>Priprema</h2>



<p>Meso operite i posušite. Na velikoj tavi na malo ulja pržite meso sa svih strana. Izvadite meso u posudu u kojoj će se peći (mora biti s poklopcem), pa na istoj masnoći pecite šnitice luka. Kada porumene i uprže se, dodajte šnitice češnjaka. Dodajte začine, promiješajte na vatri, pa ulijte oko pola litre vrele vode. Neka prokuha. Prelijte meso, malo sve prodrmajte, pa stavite u ranije ugrijanu pećnicu na 220°C. Odmah kad je zatvorite smanjite na 140°C i pecite ukupno oko 4 sata. Nekoliko puta izvadite i okrenite meso. Neka bude bogati umak, mora ga biti barem 1-2 cm oko mesa. Na kraju pečenja meso se više ne da okrenuti, raspada se. Tada znate da je gotovo. Izvadite ga, a umak stavite u dublju posudu i štapnim mikserom ga pasirajte. Procijedite, pa stavite na vatru i povežite škrobnim brašnom (otopite ga u malo hladne vode). Kada prokuha, gotov je. Naravno, probajte ga, dodajte po želji ako još nešto želite. Ljutinu, sol ili sl. Trgajte meso i prelijte dijelom umaka onoliko koliko ostavljate za sendviče. Dijelom prelijte razrezanu ciabattu, stavite puno mesa pa po želji povrće i sir, ili samo meso i umak. Dobar tek!&nbsp;</p>

<p>Poznata talijanska pogača koja je jako ukusna i prozračna. Možete samo staviti malo maslina i rajčica, par komadića ružmarina i krupne soli, a možete praviti slike, doslovno. Ovo je samo jednostavni primjer kako se može napraviti nešto brzo i lako, a da izgleda drugačije. </p>



<h2>Sastojci</h2>



<p>500 g brašna&nbsp;</p>



<p>1 vrećica suhog kvasca&nbsp;</p>



<p>3 dl mlake vode&nbsp;</p>



<p>20 g šećera&nbsp;</p>



<p>1 jušna žlica soli&nbsp;</p>



<p>par grančica ružmarina&nbsp;</p>



<p>masline&nbsp;</p>



<p>maslinovo ulje&nbsp;</p>



<p>1 režanj češnjaka&nbsp;</p>



<p>rajčice&nbsp;</p>



<p>krupna morska sol&nbsp;</p>



<h2>Sastojci</h2>



<p>Stavite brašno u zdjelu, dodajte sol i promiješajte. U sredini napravite rupu i dodajte ostale sastojke. Sve sastojke umijesite iz sredine prema van u glatko, mekano i ljepljivo tijesto.&nbsp;</p>



<p>Napravljeno tijesto (trebalo bi biti puno mekše nego inače za kruh i peciva) sam odmah stavila u hladnjak na hladnu fermentaciju koja traje 24 sata. Kada to vrijeme prođe, izvadite, s nauljenom rukama preklopite dva ili tri puta i spustite u lim. Bez razvlačenja i pretjeranog diranja. Naravno, dodajte maslinovo ulje i pokrijte najlonom, pa ostavite da tako stoji oko 4 sata. </p>



<p>Prstima napravite udubljenja. Ružmarin istucite batom, da pusti aromu, grubo pokidajte, stavite u zdjelicu i pomiješajte s 1 dl maslinovog ulja i češnjakom protisnutim kroz prešu za češnjak. Pomiješajte. Premažite s time pogaču, pa na nju stavite masline i dr. Možete posuti s malo krupne soli, iako se to zbog zdravlja ne preporučuje. Ako vam je ružmarin prejak, možete staviti neki drugi začin, origano, timijan, a ako volite bosiljak, njega se stavlja na već pečenu focacciu. Također, možete raditi i &#8216;sliku&#8217; ako imate volje. Pecite kada lijepo naraste na 180°C oko 20-25 min, dok ne porumeni. Mlaku kidajte na komade, a hladnu možete rezati.&nbsp;</p>

<p>Ovu musaku jako volimo. Sočna je, ukusna i ne znam nikoga kome se ne sviđa. Ako imate nekoga tko ne voli patlidžane, ogulite koru. Onda samo šutite, jer se okus ne može osjetiti i izolirati. Barem je meni tako uspjelo.&nbsp;</p>



<h2>Sastojci</h2>



<p>2 patlidžana, oko 1 kg&nbsp;</p>



<p>500-600 g mljevenog mesa, obično u zemljama iz koje dolazi musaka se koristi junetina, ali po želji&nbsp;</p>



<p>1 veća glavica luka&nbsp;</p>



<p>2-3 režnja češnjaka&nbsp;</p>



<p>1 paprika&nbsp;</p>



<p>800 g pelata, sjeckanog mesa rajčice&nbsp;</p>



<p>žlica začina za juhe i variva&nbsp;</p>



<p>sol, papar&nbsp;</p>



<p>3-4 srednja krumpira&nbsp;</p>



<p>ulje&nbsp;</p>



<h2>Priprema</h2>



<p>Patlidžane operite i nasijecite na tanke kriške po dužini. Stavite ih u hladnu, slanu vodu na oko 30 min. Ako želite biti brži s krumpirima, kada ih ogulite i operete, naribajte ih na tanke kriškice i stavite u zdjelu u koju ćete izliti vrelu vodu iz kuhala i posoliti je, pa kuhati krumpire 3-4 min, da se ne raspadnu. Izvadite ih lopaticom na tanjur. Inače sijecite na tanke šnitice i ostavite u vodi. Za umak pržite kockice luka, zatim dodajte meso pa ga pržite dok se ne počne karamelizirati, odnosno dobivati smeđu boju. Tada dodajte rajčice i papriku narezanu na sitne kockice. Začinite i kuhajte 10-ak min. Sklonite s vatre i malo popaprite. Na većoj tavi na sasvim malo ulja pecite patlidžane koje ste dobro ocijedili i stavili na ubruse da upiju višak vode. Ja ih još ubrusom malo pritisnem rukom, da budu potpuno suhi.&nbsp;Obično ovako nisu gorki, ali za svaki slučaj uvijek probam jedan iz prve ture, da ne upropastim cijeli ručak! &nbsp;</p>



<p>Pecite ih tako i vadite na suhe ubruse, ako ostane u njima višak masnoće, da ih pokupi. Ja ih ne solim dodatno.&nbsp;Sada slažite u vatrostalnoj posudi krumpire u tankom sloju, zatim patlidžane pa meso i tako ponovite tri puta pa na kraju pokrijte patlidžanima. Prelijte s 1 dl vode, nju ne dodajem u umak jer je lakše rasporediti ga bez viška vode, barem meni! Pecite 30-40 min u pećnici na 180-200°C. Nakon otprilike 30-35 min umutite 3 jaja s malo soli i prelijte musaku. Pecite dalje dok ne porumeni. Ostavite da se malo ohladi, 10-15 min, jer&nbsp;se onda lakše reže na uredne kocke.&nbsp;</p>

<p>Talijani prave ovako onaj naš jednostavni kolač s jogurtom, ali oni umjesto maslaca ili ulja i jogurta koriste mascarpone. Daje nešto drugačiju strukturu i aromu. Neodoljivu!&nbsp;</p>



<h2>Sastojci</h2>



<p>4 velika jaja&nbsp;</p>



<p>180 g šećera&nbsp;</p>



<p>2 vanil šećera&nbsp;</p>



<p>250 g mascarponea&nbsp;</p>



<p>250 g mekog brašna&nbsp;</p>



<p>1 prašak za pecivo&nbsp;</p>



<p>Malo soli&nbsp;</p>



<p>Korica limuna&nbsp;</p>



<p>Sok limuna da jabuke ne potamne, ako njih koristite&nbsp;</p>



<p>4-5 krušaka&nbsp;</p>



<p>(voće po želji, jabuke, višnje, marelice, što god volite)&nbsp;</p>



<h2>Priprema</h2>



<p>Operite i očistite kruške. Zagrijte pećnicu na 180°C. Pola krušaka nasjeckajte na kockice, pola sijecite za površinu kolača na tanje šnitice. Brašno pomiješajte s praškom za pecivo. Mutite jaja sa šećerom 7-8 minuta dok ne nastane bijela krema. U drugoj posudi izmiješajte mascarpone, pa dodajte par žlica kreme od jaja i pažljivo žicom umiješajte. Zatim dodajte još par žlica i umiješajte. Sad kremu od mascarponea pomiješajte s onom od jaja sa žicom. Dodajte brašno i sve lagano umiješajte. Lopaticom umiješajte voće. Tijesto premjestite u kalup za torte promjera 26 ili 28 cm. Po vrhu složite kriške krušaka i kolač pecite 35-40 min. Probajte čačkalicom da vidite je li pečeno. Izvadite i neka malo ostane u kalupu. Premjestite na rešetku da se ohladi, pospite šećerom u prahu. Poslužite s tučenim slatkim vrhnjem.&nbsp;</p>

<p>Jako je slično talijanskoj rapsodiji, a jednom ću podijeliti i svoj recept za nju. Dobijete umak za polizati prste. Ili zdjelu. Doslovno.&nbsp;</p>



<p>Prošle godine je bila ona fora s rajčicama i feta sirom koji se ispeku i miksaju. To je to, samo sam malo promijenila i mislim da ću i inače cijelo ljeto raditi varijacije na temu! Tih pet minuta posla, očaravajući miris, očaravajući okus i bezbroj mogućnosti da ga koristite. Može se koristiti recimo drugi dan s tjesteninom koju samo morate skuhati po uputama. Možete dodati malo vode od tijesta, da se lakše poveže. &nbsp;</p>

<p>Maslinovo ulje&nbsp;</p>



<p>300 g tjestenine (za drugu varijantu ili drugi dan)&nbsp;</p>



<h2>Priprema</h2>



<p>Zapecite ciabattu ili obični kruh, pospite&nbsp;maslinovim uljem i timijanom po želji. Pecite par minuta u pećnici&nbsp;kao i baguette.&nbsp;</p>



<p>Za to vrijeme uzmite lim i stavite oprane rajčice, najbolje mini grapollo, malo očistite češnjak pa odrežite vrh i stavite među rajčice. Kupite ili pokupite sireve koji su načeti u hladnjaku pa ih stavite u lim. Dodajte papriku narezanu na trake. Pospite maslinovim uljem, stavite par grančica timijana, malo posolite češnjak, (pazite kakve sireve imate, zbog soli!), pa stavite peći oko pola sata na 200°C. Češnjak mora biti mekan, onda znate da je ostalo također gotovo. Izvadite i pričekajte koju minutu. Češnjak istisnite iz ljuske na rajčice i sir. Prebacite u duboku zdjelu ili čašu za štapni mikser pa sve zajedno usitnite. Probajte, posolite i zaljutite po želji.&nbsp;</p>



<p>Mi smo umak jeli&nbsp;s preprženom ciabattom i bilo je teško stati. Ostatak možete drugi dan napraviti s tjesteninom ili obrnuto. Ako išta ostane, naravno.&nbsp;</p>

<h2>Priprema</h2>



<p>Tostirajte tost. Možete i šnite kruha, nije velika razlika, neka su samo tanke. U sirni namaz umiješajte začine ili pesto, uglavnom neka ima malo češnjaka i soli, kao i sjeckanih začina poput bosiljka ili origana. Zaljutite chillijem ako volite. Stavite malo namaza na tost, stavite prvo pršut pa onda smokvu koju zarežete na križ pa u prorez stavite žličicu namaza. Probodite ukrasnim štapićem. Zabodite listić bosiljka i pokapajte medom. Užitak zagarantiran!&nbsp;</p>

<p>Recept koji je postao hit kod svih koji su ga probali. Prijatelji stalno pitaju kada ću ih opet praviti, nedavno su se sjetili da ide sezona grožđa. Pa evo recept ovako javno, da i oni mogu napraviti nekada.&nbsp;</p>



<h2>Sastojci</h2>



<p>Za 10 brusketa:&nbsp;</p>



<p>2 šake lista bosiljka&nbsp;</p>



<p>1 režanj češnjaka&nbsp;</p>



<p>25 g prženih pinjola&nbsp;</p>



<p>1 žlica parmezana&nbsp;</p>



<p>40 ml maslinovog ulja + 2 žlice za baguette + 2 žlice za grožđe&nbsp;</p>



<p>300 g grožđa bez koštica (ako nađete)&nbsp;</p>



<p>100 g svježeg kremastog sira, može biti i sirni namaz&nbsp;</p>



<p>10 kriški baguettea&nbsp;</p>



<p>Cvijet soli ili sl.&nbsp;</p>



<p>1 žlica meda&nbsp;</p>



<p>5 grančica timijana + za ukras&nbsp;</p>



<h2>Priprema</h2>



<p>U posudu za štapni mikser stavite listove bosiljka, češnjak, pinjole (ili bademe), maslinovo ulje, parmezan i napravite pesto. Ugrijte pećnicu na 190°C. Operite grožđe, otkinite bobice pa stavite na papirom obloženi lim. Pošpricajte s dvije žlice maslinovog ulja, stavite grančice timijana između njih i pecite 12-15 min dok malo ne &#8216;uvenu&#8217;. U međuvremenu nasijecite baguette. Pospite maslinovim uljem pa prepržite do zlatne boje. Kada se malo ohlade, namažite svježim sirom (malo ga posolite i popaprite) i pestom, te po potrebi dodajte još malo začina. Složite grožđe pa nakapajte malo meda na vrh&nbsp;i ukrasite timijanom. Servirajte uz lagano bijelo vino.&nbsp;</p>
